Tasty Tuesday: Pies Galore!

Probably my favorite thing to make for Thanksgiving is pie! Not only are they yummy, but it’s simple to make too!

Here are three of my favorite pies to make, that you can whip up in no time!

1)Chocolate Fudge Pie

The Good Stuff Inside

  • 1 store-bought piecrust, fitted into a 9-inch pie plate
  • 6 ounces semisweet chocolate
  • 1/2 cup unsalted butter (1 stick)
  • 3 large eggs
  • 1/8 teaspoon kosher salt
  • 1/2 cup plus 3 tablespoons granulated sugar
  • 1 1/2 cups heavy cream

How it’s made

  1. Heat oven to 375º F. Place the pie plate on a baking sheet. Prick crust with a fork and line with foil. Fill to top with pie weights or dried beans. Bake until the edges are firm, 20 to 25 minutes. Remove the foil and weights and bake until just golden, 8 to 10 minutes.
  2. Reduce oven temperature to 325º F. In a heatproof bowl set over (not in) a saucepan of simmering water, melt the chocolate and butter.
  3. Using an electric mixer, beat the eggs, salt, and ½ cup of the sugar until fluffy, 4 to 5 minutes. Fold a third of the egg mixture into the chocolate mixture, then fold in the remainder.
  4. Pour the combined mixture into the crust and bake until puffed and beginning to crack, 20 to 25 minutes. Cool for 1 hour, then chill.
  5. Beat the cream with the remaining sugar until soft peaks form. Spread over the pie and enjoy!

2)Simple Chocolate Pecan Pie

  • 1 1/2 cups pecans
  • 1 cup semisweet chocolate chips
  • 1 unbaked 9-inch pie shell
  • 4 eggs, beaten
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • Caramel Sauce, for garnish, recipe follows
  • Confectioners’ sugar, for garnish

How It’s made

Preheat the oven to 375 degrees F.

Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.

In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake until the filling sets, 50 to 60 minutes. Remove from the oven and cool for 30 minutes before slicing. ( I usually can’t wait that long!)

3)Apple Butter Pumpkin Pie

  • 1 cup apple butter
  • 1 cup fresh or canned pumpkin
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 3 eggs, slightly beaten
  • 3/4 cup evaporated milk
  • 1 unbaked 9-inch pie shell
  • Sweetened whipped cream, for garnish

How it’s made

Preheat oven to 425 degrees F.

Combine apple butter, pumpkin, sugar, salt and spices in a bowl. Stir in eggs. Gradually add milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set.
