Tasty Tuesday: Coconut Pecan Cupcakes

I haven’t found a cupcake/cake recipe this good and this simple in a long time!

The last few times I have gone to Cole’s Grandma’s House she has made us this wonderful cake! Last time she made it I asked for the recipe, she was so kind and shared it with me!

This week I made the cake in cupcake form!

The Good Stuff Inside:

1 box yellow cake mix

1 can coconut pecan icing

4 eggs

1 cup oil

1 cup water

Thats all folks!

How it’s made:

I promise this recipe couldn’t be simpler! Combine all ingredients, (I start with the cake mix and icing first) then spoon 1/4 cup of mix into a lined cupcake pan. The batter will be very watery, but don’t worry, you’re doing it right!

Bake at 350°F  for 40-45 minutes. The tops will be shiny and golden brown. If you fear the cupcakes may not be done, don’t hesitate to give it another few minutes.

If you’d like to make it in a cake form, a bunt or loaf pan works well. Bake at 55 minutes.
