Tasty Tuesday: White Lasagna

October 12, 2010

I’m kicking off Tasty Tuesday with one of my favorite favorite meals of all time: White Lasagna.

My sweet man created this dish for me. It combines my favorite meat and veggie, and if it didn’t contain 1,000,000 calories per bite; I’d eat it everyday.

The Yummy Goodness Inside

1 box of oven ready lasagna noodles (I like the flat kind, without ridges)

homemade Alfredo sauce or 2 jars of Classico Alfredo sauce ( one regular, one tomato basil)

1 bag baby spinach

3 boiled and pulled chicken breasts

1 large container of ricotta cheese (buy the real stuff, not the store brand)

1 egg

1 package prosciutto (YUM!)

5 leaves fresh basil

1, 2 cup bag of shredded mozzarella

Prep

In a bowl, mix ricotta cheese, egg, and 1 cup mozzarella.  In another bowl, mix together the two types of sauces. Chop the stems off the spinach and the prosciutto into small squares.

Cook

Coat the bottom of a 13×9 baking dish with 1/4 cup of sauce.

Layer the Lasagna as follows:

Noodles

Cheese Mixture

Chicken

Prosciutto

Spinach

Sauce

Continue this layering pattern until dish is full (I normally repeat the pattern twice). Top off the lasagna with the remaining shredded mozzarella. Cover and bake at 375°F for 35-40 min. Remove cover during the last 5 min and set the oven to broil.

Have a Tasty Tuesday!
