Simple Summer Slaw

I can’t get enough of this coleslaw, featured in Real Simple this summer. I’m pretty sure its meant to be a garnish, or a side, but I find myself standing in the doorway of the fridge, eating it all by itself! That’s just how good it is!

(Making this slaw is all about understanding proportions, so feel free to have fun with the measurements based on how you like your slaw)

Here’s what you need…

first sauté corn, butter, and red pepper…

while thats cooking, use a mandolin to cut cabbage

then add the E.V.O.O., Apple Cider Vinegar, Salt, and Pepper

Then add the roasted corn and red pepper

mix together and enjoy!
